Cowboy Cookies Recipe

This has got to be one of my favorite cookie recipes.  Because I can never decide if I want chocolate chip, oatmeal, snickerdoodle... this cookie is all of these wrapped into one (and more!)  So yummy! 

I like to make a double batch and freeze half.  Place rounded tablespoonfuls onto a greased cookie sheet, then place in the freezer.  When they're completely frozen, transfer to a zippered freezer bag.   Then, whenever you need a quick dessert for a potluck, or the kids tell you, at 9 p.m., they need something for the school bake sale tomorrow, just pull out what's needed and bake.  Fresh baked cookies in an instant! 

Cowboy Cookies

1 1/2 sticks (3/4 cup) softened butter
1/4 cup shortening
1 cup brown sugar, packed
1/2 cup white sugar
2 eggs
1 tsp. vanilla extract
2 cups old fashioned rolled oats
2 cups flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 cups chocolate chips
1 cup chopped pecans
1 cup coconut flakes

Beat the butter, shortening, sugar, eggs, and vanilla until light and fluffy.  Stir in oats, flour, baking powder, soda, salt, and spices.  Next, add in the chocolate chips, nuts, and coconut.  Drop by rounded tablespoonfuls onto and ungreased cookie sheet.  Bake at 350 for 10-12 minutes, or until edges are lightly browned.  Cool and eat!
