Refrigerator Dill Pickle Recipe

I've been pickling like crazy!  We currently have two quart jars of sweet refrigerator pickles in the fridge.  They're definitely a family favorite.

But you've got to have dill pickles around too.  They're so good on burgers, in tuna salad, or just to snack on.  They're super easy to make, too, because you don't have to use a canner for this recipe.

Easy Refrigerator Dill Pickles
3/4 cup water
3/4 cup vinegar
1-2 heads fresh dill (or 2 teaspoons dried dill)
1 tablespoon pickling spices
1/4 teaspoon canning salt (optional)
1 lb. pickling cucumbers (approximately)

Cut the pickling cucumbers into spears or slices, or just leave them whole.  Pack them into a quart-sized jar.  Add dill, pickling spices, and salt to the jar.  Pour water and vinegar into the jar.  Screw on a lid and shake vigorously.

Now, set the jar in the fridge.  The pickles will be ready to eat in about four days, but the flavor continues to develop over time.  These will last in the refrigerator for several months.
