Recipe: Apricot Crisp

This is a great year for apricots.  I can't remember a year lately that they've tasted this good!

Our tree is producing like crazy, so I've been looking for new ways to use up the yummy fruit.  This recipe for apricot crisp is super yummy, and it's easy to make. 

If you don't have an apricot tree, head to a farmer's market and pick up a few pounds.  If you don't care for apricots, or you happen to have a glut of something else, feel free to substitute another fruit.  Plums, peaches, or nectarines would be good too.




Apricot Crisp
2 pounds apricots, pitted and cut into pieces
1/3 cup sugar
1 tablespoon lemon juice
1 1/2 cup rolled oats
1/2 cup flour (I used whole wheat, but you could also use white flour)
1/3 cup brown sugar, packed
4 tablespoons melted butter
3 tablespoons honey
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
1/4 teaspoon cardamom

 Mix together apricots, sugar and lemon juice and set aside.  In a second bowl, mix together oats, flour, and brown sugar.  Stir in melted butter, honey, and spices.  Pour the apricots into an 8 X 11 pan.  Sprinkle the crumble mixture evenly over the apricots.  Bake in a 375 degree oven for 30 to 35 minutes. 

It's delicious warm, and we like to eat it for breakfast.  It also makes a great summer dessert when you top it with vanilla ice cream.
