Day 149: Oh Where, Oh Where Have the Waffles Gone?

Apparently, there is a big waffle-meltdown going on of which I have been blissfully unaware. Panic ensuing as the supply of Eggo Waffles dwindles. Hoarding of the said breakfast treat.

Actually, my kids used to love them. I, too, love waffles but I much prefer the homemade variety. Sure, they take a bit more work than the frozen types. But they taste so much better and are way, way cheaper.

Whenever I make up a batch (which I've been known to do for dinner as often as for breakfast) I always make a bunch extra. Seal them in a container and stick them in the freezer. On busy mornings they can be popped into the toaster just like the store-bought variety.

Over the years, I've tinkered with the recipe, because I'm real picky about my waffles. Here's what I've come up with. I love it, but tinker away to get a waffle that suits you.

Homemade Waffles
2 cups flour
2 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
3 eggs
1 teaspoon vanilla extract
5 tablespoons melted butter
1 1/2 cup milk

Mix together all dry ingredients, then stir in remaining ingredients. Pour onto a preheated and oiled waffle iron. Cook until golden brown and crispy (about 3-4 minutes).

Optional: After pouring the batter into the waffle iron, try adding berries, diced apple sprinkled with cinnamon or (my personal favorite) sliced banana with a handful of chocolate chips. Yum!
