Day 60: Apple Donut Recipe

I hope everyone had a wonderful Thanksgiving. My husband took several days off from work, and we spent most of the week doing nothing much. Hence the long days between posts.

As we like to do on lazy mornings, we made apple donuts a few times this week. They're super yummy and a family favorite.

The dough needs to be made up the night before, and then they're cooked up fresh in the morning. They're great with a cup of coffee on a chilly morning.

Apple Donuts
1/2 cup granulated sugar
3 tablespoons melted butter
1 egg
1/4 cup apple juice
1/4 cup milk
1 tsp. rum extract
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
1/2 tsp. allspice
1 1/4 cup chopped apple (cored and peeled)
2 tsp. baking powder
1 tsp. baking soda

2 3/4 cups flour

Sugar topping:
1/2 cup granulated sugar
1 tsp. cinnamon

In a bowl, cream together butter, sugar, and egg. Stir in apple juice, milk, spices and apple. Blend in baking powder, soda, and flour. Cover and refrigerate overnight.

In the morning, turn dough out onto board covered liberally with flour. Roll out until about 1/2 inch thick. Cut with a donut cutter. Or, use a round cookie cutter or glass to cut the donuts.

Deep fry in oil 375 degrees for approximately 1-2 minutes on each side. (Donuts will be a dark brown when done.) While still warm, dip in sugar topping.

You can also bake your donuts, if you prefer, in a 350 degree oven for approximately 20 minutes.
