Day 48: Spiced Apple Breakfast Bake Recipe

We've been busily eating the apple we had picked last month. But you can only eat so many apple slices before you get burned out.

Luckily, apples are versatile. My kids especially love the apple breakfast bake on cold mornings. It's inexpensive to make, we always have the ingredients on hand, and it makes the house smell great as it's baking.

Although it's not too time consuming to put together (I whipped one up this morning), you could also put it together the night before and store in the fridge. Just let it set out for half an hour before putting it in the oven.

Spiced Apple Breakfast Bake
Apple filling:
4 apples, peeled, cored and sliced thin
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1/4 teaspoon allspice
1/4 cup sugar
1/8 cup molasses

Batter:
1 1/2 cup flour
1/2 teaspoon salt
2 teaspoons vanilla extract
1 1/2 cups milk
6 eggs
2 tablespoons melted butter

Mix all ingredients for the apple filling in a bowl and set aside to marinate. In a second bowl, mix all ingredients for the batter.

In a 9X13 greased baking pan, spread the apple mixture evenly. Pour batter over the top. Bake at 425 degrees for approximately 30 minutes (or until done.)
