Day 15: Easy Home-Baked Bread

It sounds like an oxymoron, but this recipe really does make home-made bread easy.

I've always loved home-baked bread, but I never had the time to devote an entire day to baking (especially when one loaf would be gobbled up immediately after leaving the pan.)

But when I found this recipe from Mother Earth News, I knew I had to try it. And it really is as simple as promised.

The best part -- no kneading! Just stir all the ingredients in a bowl and leave it. After a few hours, pop some in the oven. The rest of the dough is stored in the refrigerator for later loaves.

The recipe calls for a bread peel or baking stone; I have neither. Instead, I put my loaves free form on a baking sheet or in a traditional loaf ban. They turn out wonderfully.

And don't be tempted to knead, even a little. We tried and the dough never did rise and gave us a hard loaf inedible to everyone but the hens.

My kids love white bread, but using whole wheat flour is great too. The best part? We buy our flour and yeast in bulk, so each loaf costs us less than 50 cents!

Don't be afraid to try this recipe out yourself, even if you've never baked bread before. It's fabulously simple.
